No Bake Energy Balls

Ingredients
  • 1 cup rolled oats (not quick oats)
  • ½ cup dark chocolate chips (mini ghiradelli preferred but can use regular size as well)
  • ½ cup of smooth natural peanut butter
  • ½ cup flax seed OR chia seeds
  • ⅓ cup of honey
  • 1 tsp of vanilla
Instructions
  1. Mix all ingredients together well in a bowl, cover and set in fridge for 20 min.
  2. Make a heaping scoop with a small cookie scooper for consistent size or can also do by hand.
  3. Put in fridge for few hours before eating or can throw in freezer for 30 min to an hour to expedite firming up.
  4. Store in the fridge.
