The Holiday Recipe you Must Try: Delicious Sweet Potato Casserole Recipe

If you have been following me awhile, you know I am far from perfect! It is a constant struggle being a supportive wife and mother to 3 little kids, all while trying to have a successful blogging career. It’s a delicate balancing act, and then life becomes even more hectic around the holidays with all the shopping, cooking, and holiday activities. Can you ladies agree? I know I am not the only one or at least I hope not! One thing that comes out perfect every time and is a hit everywhere I take it, is this holiday recipe you must try…My sister-in-law’s sweet potato casserole recipe. I began making this holiday recipe probably 7 years ago when our first-born was a baby and I thought to myself, uh oh, I’m a mom now and need to get my bootie in gear with cooking and acting like a “real mom”! Haha! It has been so popular ever since and has become my “signature” side dish for holiday gatherings.

This sweet potato casserole recipe is simple and not too difficult so anyone can make it. That is why I love it, of course! I’ll share my holiday recipe you must try below:


Sweet Potato Casserole Recipe

FILLING:

  • 3 cups cooked and mashed sweet potatoes
  • 2/3 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla
  • 1/3 cup milk

TOPPING:

  • 1/3 cup butter, melted
  • 1 cup brown sugar
  • 1/2 cup flour
  • 1 cup chopped pecans

INSTRUCTIONS:

  1. Boil and mash sweet potatoes (I like to use my hand mixer to help mash the potatoes faster).
  2. Beat in sugar, butter, eggs, vanilla and milk until smooth.
  3. Put filling in a greased casserole dish (9×13).
  4. For topping, combine dry ingredients first in small bowl. Stir in melted butter and chopped pecans. Sprinkle evenly over filling.
  5. Bake at 350 degrees for approximately 30 min. or until bubbly and hot in center. Enjoy!
